Manufaktura means manufacture (who would’ve guessed), originating from the Latin manu facta (handicraft), and it’s one of hallmarks of Łódź. A place where traditional industrial architecture meets modernity. Inside – a whole bunch of history. And right outside? A bunch of yummy goodness! Because it’s exactly where we’re located. What do these two places have in common? They both respect tradition and handicraft, while embracing modernity. Even though you might think the old cotton mill is history, we try to keep history alive, but on our own terms – delivering tailored, handmade donuts!
Łódź has no secrets before us! This is true especially about Piotrkowska St., the cradle of local commerce, which hosts us in one of its venues. Gorąca Pączkarnia – a place filled with flavor, not to mention… well, sure – donuts, which tempt passers-by straight from shop windows. It’s always good to stop for a while!
Where does the magic of sweet treats lie? It’s in our hands—literally! 🙌 We hand-wrap all our doughnuts, and we call the entire process “KULANIE” (rolling dough balls into round doughnut shapes). For the curious, you can see this incredible performance in our display cases. We have nothing to hide from you 😎
Although our ready-made doughnuts sell out instantly, we don’t cut corners when making them. We pay attention to every detail, don’t use powdered dough, concentrates, or other enhancers, fry them in 100% rapeseed oil, which prevents the degradation of unsaturated fatty acids, and, what’s more, we use Polish flour! 🌾 Importantly, all our doughnuts are traditionally filled before frying. Thermal processing allows us to enhance the flavor and deliver unique flavors. 😋
Sometimes we like to mix it up. Top-quality, practically homemade ingredients—yeast, eggs, flour, and margarine—go into a large mixer. And although each ingredient is completely different, they combine during the process, creating the perfect mixture—unique doughnut dough. After taking it out, we let it rise for a while, then divide it into equal portions, so that each of you receives a proper portion of pleasure!
We all know that what matters most in life is what’s inside. Following this principle, we pay the utmost attention to what we fill our doughnuts with—delicate creams and fruit preserves. And most importantly, we do it before frying. This allows us, like no other, to bring out the best in them.
As they say, first the mass, then the sculpture. Or, if you prefer, the FORM. Ours takes the shape of balls, in which our fillings are wrapped. It’s a unique performance that can make many a gourmet blush and bake!
This is a stage that happens to all of us sooner or later. However, in the case of our doughnuts, the sooner the better. Ripening (also known as proofing) begins by shaping the raw doughnuts on wooden boards. This resting period allows the dough to rise and take on its desired shape.
Time for a hot bath. In our case, a bath prepared with 100% rapeseed oil, rich in unsaturated fatty acids like Omega-6 and Omega-3. And we are the Alpha in all of this. Because together we complement each other and know how to recognize the perfect moment to draw them out.
Our doughnuts are delicious on their own. But we like to sweeten them – for ourselves and our doughnuts. So, at the end of each process, it’s time for the icing on the cake. Or rather, the icing on the doughnut. Optionally, powdered sugar or cocoa powder. And if that’s not enough, we sprinkle the whole thing with candied fruit pieces, dried flowers, or dried fruits. Nothing more, nothing less.
